Thanks to this community, my dual boot hackintosh is a success! I managed to get Yosemite running even with my GTX 980 installed!
I used Chimera and the following MultiBeast settings. Shout out to user raytian for the settings!

The only setting I actually added was to allow the TRIM update for Yosemite, too.
I followed the online guide for my hackintosh install. My boot keys were "-v GraphicsEnabler=No nv_disable=1". After Yosemite is installed, I just installed the Nvidia drivers and everything worked! I was even able to use Migration Assistant tool to move all of my files over from my Mac Book Pro.
(Note: There are several guides online as to how to use Migration assistant. I was unfamiliar with the software at first, but it's really easy to use. I did not use Time Machine because for some reason Yosemite was unable to see my Time Machine backup drive.)
I first used Migration Assistant to move all of my old files over from my Mac Book Pro. In the Migration Assistant settings, I made sure not to transfer over any of my Mac's CPU settings. I don't know what will happen if you transfer over these settings, but I didn't want to screw with any of my MultiBeast stuff. I also made sure the transfer created a new user that shared the CPU setting. Then I just deleted the other user that was created on the install.
I was unable to get onboard audio to work from the Yosemite SSD, but that didn't really matter because I have a studio monitor set up that uses a USB dedicated sound card, which work perfectly.
The Windows 8.1 install was easy. The only real suggestion I would make is other than the suggested settings from tonymac for the bios, manually disable any other drives other than the one you intend to install your Windows or Mac OS on. I made the mistake of booting my Windows install with both my HDD and my SDD enabled, so a reserved partition was created on my HDD. This forced me to have to reinstall and reformat the drive several times.
A good tip to avoid this partition altogether on the install: after installing Yosemite, format your other SSD that you plan to install windows on to MBR MS-DOS FAT through diskutility. When installing Windows on this drive, simply highlight your SSD and click format. The partition itself is required to boot your Windows SSD, but doing this just fuses the partition with all your other windows stuff.
