Here is a great starting point.
Note: it is possible to install all 3 of your mentioned operating systems on one drive (SSD) and share data between all 3 with another (HDD). I've done exactly that before. (On a ~$650 computer)
I'm on mobile right now but I'll put together a full build and link to some useful articles that I used for this when I get to my desktop tomorrow morning.
I've been reading that website, but it seems to be easier to put the OSs on two drives.
I went slightly over budget hoping BTC rises a bit more in the next few days. This build's only has a Blu-Ray reader. If you want a Blu-Ray writer this is your best bet for Hackintosh compatibility.
The Blu-Ray drives seem to be ... overly expensive on bitcoinstore.com (.7795 BTC | $654.61 USD) which is why I linked to pcpartpicker for both. The easiest place to cut back would be your hard drive which if you dropped to a 1TB or 2TB would put you under 1 BTC total.
The 5.1 sound card is included in the motherboard. Hackintoshs are not very compatible with PCI soundcards and finding a well priced USB sound card that supports 5.1 is difficult. If you want a 2.1 system then the Behringer UCA 202 is a very solid option at about $30 USD (can't seem to find it for sale in BTC)
As for the guide I mentioned earlier to do a tripleboot... I can't seem to find it right now. It was on Lifehacker and it did work with Ubuntu 12.10, OS X 10.8, and Windows 8 back when I installed. I've since gotten rid of OS X and switched Ubuntu for Debian but at one point I did have all 3 operating systems on my 180 GB SSD.
