What GPU/Motherboard to use?

I'm building my first hackinstosh, and I'm not sure what GPU/Motherboard that I want to use.

I will be running my system off of 2 27" 1440p monitors. I wont be gaming, but I will do some stuff like premiere/bridge/chrome. Would a GTX 560Ti be sufficient for the GPU?

Also what kind of motherboard would I go for?
