So I decided to just do a fresh install of yosemite with clover

Just tried this guide using recommended settings...

I go through the install process when prompted to "Boot OS X Install from OS X Install OS X Yosemite " go through with it, it restarts and I hit "Boot OS X Install from OS X Install OS X Yosemite" again and continue. Then when it restarts the second time is where I have issues.

the guide says "The system will boot into the new drive, create the recovery partition, and complete the installation. Upon completion, system will restart a 2nd time. Press the hotkey to choose boot device When Clover boot screen is visible, choose Yosemite The system will launch OS X Setup"

This is where I'm confused... when I boot back from the usb the only option I see is still "Boot OS X Install from OS X Install OS X Yosemite", and when I hit that it just restarts the whole installation process.

I don't see "When Clover boot screen is visible, choose Yosemite". And when the guide is saying choose boot device then is that still from usb? I tried booting from the hard drive and got nothing, and didn't see any other option from clover.

I may try this whole thing again but not sure what is supposed to happen.

Also in the guide it says " There are a few different ways to setup Clover on the USB. Using Legacy Mode is the simplest and most reliable for 5, 6, 7, 8, and 9 Series Gigabyte motherboards with standard default BIOS or UEFI settings. "

so what is legacy mode and what options do I select to use it? the guide isn't clear but I'm using a gigabyte Z68X-UD3H-B3, i7 2600k, and Radeon HD 6850 so I'm wondering if I should be using it instead...
