Hey guys, this is mostly posted as a thank you to the many many people who have suffered with the issues I faced and were kind enough to actually post their solutions online.
My PC:
Mobo: Gigabyte GA-Z97X-SLI
CPU: i5-4690K
GPU: Gigabyte G1 Gaming GTX 970
SSD: Crucial MX100 256GB
HDD: WD Caviar Blue 1TB
My hackintosh is installed on my custom built PC that has been happily running windows for 9 months before i decided to torture it with countless reboots, and many HDD formats.
I now dual boot Windows 10 (SSD) and OSx Yosemite (HDD) with absolutely zero issues (though we shall wait and see how long that lasts!).
I encountered a few issues, the biggest being that I had no access to a real Mac, so I had tried a method which we are not allowed to discuss here (see sidebar) before eventually giving up and deciding to take a more vanilla approach. I followed Tonymac's guide pretty closely, so i wont do a step-by-step, but i'll tell my story anyway!
I installed my aforementioned OSx in a VirtualBox (incredibly simple, absolutely no issues with that) and proceeded to download the official installer from the App Store. Using unibeast I set that up on a USB memory stick, and began my install! I had discovered from my previous failures roughly which boot flags allowed me to get through to the installer (-v -x -PCIRootUID=1 GraphicsEnabler=No nv_disable=1 [easily the most important flag]) and complete my installation.
I then used multibeast to install the "DSDT Free" package, in addition to my Audio driver package, the "fakeSMC" packages, an ethernet package and a few boot options (1080p mode, IGPEnabler=No, and the others included in DSDT Free).
My next issue was the GPU, I had read that many people have had issues with GTX 970s and i was no different. The drivers were a pain and im still not certain they're actually working fully, but the system is no longer an unusable, laggy mess, and i'm not using OSx for gaming so im not sure it'll be an issue. I also haven't tested HDMI audio so i cannot answer any questions about that
For those who want to know, I managed to get the 970 working by downloading the web package from the nVidia website, writing "nvda_drv=1" into my boot flags, and rebooting about 8 times while fiddling with the nVidia options at the top left of the screen. I have no idea what finally done the trick, but perseverance was key!
